Bubbles
The undisputed star of aperitifs remains champagne, especially brut, extra brut, brut zéro, brut nature - with very low sugar content - and preferably blanc de blanc. But don't forget other sparkling wines such as crémants or natural pétillants, which should always be low or no sugar. The bubbles will leave your mouth fresh and receptive to the food that follows.
White wines
You're spoilt for choice when it comes to dry white wines, which are lively, tangy and titillating. If you're looking to Burgundy, choose a Bourgogne Aligoté, a Saint-Bris or a wine from the Chablis region. The Loire region is also a great purveyor of fresh, well-crafted wines, such as Quincy, Pouilly-Fumé, Sancerre or Cour-Cheverny. You may also be tempted by foreign wines such as those from Galicia, a Rias Baixas made with Albariño, a Valdeorras made with Godello grapes or a German Riesling from Moselle.
Rosé wines
Want to prolong the vacation mood? There's nothing like a fruity rosé, with its aromas of red berries. What's more, this type of wine can be paired with a number of dishes, making it easy to match with a variety of aperitif nibbles. Wherever it's made, choose a rosé with no residual sugar, and let your taste guide you: Provence, Corsica, Loire, Languedoc, ..
And reds too
Light reds can also be good pre-dinner companions. Avoid wines whose structure is based on power or richness. Go for tender, gourmet Gamays such as those from the Loire or Beaujolais regions, Brouilly, Chénas or Fleurie. Pinot Noir from Alsace or Burgundy will awaken your senses. Not forgetting Jura grapes like Poulsard or Trousseau, which produce light, fruity, thirst-quenching wines.
